  • SHELF & FREEZER LIFE OF PASTRIES & SAVORY GOODS

This includes cookies, cakes and muffins.

These items are fresh for 24-48 hours.

Extending its shelf-life by immediately storing it in the fridge, once received prolongs it for an extra 2 days. Anything further than that decreases its texture and taste, making it stale.

The best option is to freeze it in a pastry-designated chiller/freezer immediately upon receiving to preserve freshness. If done so, the product will last for three (3) months if stored correctly in an airtight container.

The same technique applies to savory goods like cold-cuts and cheese.

Time is essential to prevent spoilage.

  • To revive stale pastries, be cautious of the internal temperature in hot weather (above 39°C/102.2°F). Limit oven preheating to 3 minutes to avoid overcooking. For frozen cookies and muffins, preheat the oven to 180°C (356°F) for 10 minutes, bake for 10-20 minutes, and cool before consuming. For frozen cakes and frosted desserts, leave them at room temperature for 30-45 minutes to restore their texture and flavor. For refrigerated cakes, 20 minutes at room temperature is sufficient before eating.
